Workflow Under Pressure is the next step for students who have completed Essentials + Confidence Building and are ready to experience what it’s actually like to work behind a café machine.
This advanced, one-day course simulates the pace, pressure, and rhythm of a real café environment. Students move beyond individual drink-making and learn how cafés really operate — managing workflow, communicating as a team, and delivering quality drinks under time constraints.
The course is hands-on, energetic, and realistic, while remaining supportive and encouraging. It’s designed to build confidence through experience, repetition, and guided coaching.
Students who successfully complete the course receive a skills assessment and trainer reference they can include on their CV.
This course is specifically tailored for 13yrs - 19yrs.

What the Day Includes
Professional Setup & Calibration
Students practise setting up a café workstation efficiently, learning how cafés prepare for service with time benchmarks and high-volume readiness in mind.
Espresso & Milk Under Pressure
Fast-paced extraction checks, grinder adjustments, and milk texturing across multiple drinks and milk types — all while managing workflow and time.
Workflow Positioning & Team Roles
Students learn café roles such as shot runner, milk steamer, assembler, and handover, including communication cues, body positioning, and smooth handoffs to minimise bottlenecks.
Service Simulation
Timed drink runs and simulated “rush hour” scenarios replicate real café pressure. Students learn how to manage multiple orders, workflow breakdowns, and recovery — just like a real service.
Reflection & Feedback
The day concludes with instructor feedback focusing on workflow, communication, time management, and maintaining quality under pressure.
