Our June Specialty Estate offering, the Costa Rica Colibrí Tarrazú, is a shining example of elegance and tradition in harmony. This coffee comes from one of the most respected growing regions in the world, known for its pristine flavour clarity and its heritage of excellence: Tarrazú, Costa Rica.


Perched in the high-altitude mountains south of San José, Tarrazú is a region that seems almost purpose-built for growing beautiful coffee. Volcanic soils, cool temperatures, misty afternoons, and distinct wet and dry seasons all contribute to the slow, even development of the coffee cherries. This patient ripening process allows sugars to concentrate, leading to beautifully sweet, clean cups.


What sets this coffee apart is its processing method—fully washed. After handpicking, the coffee cherries are pulped and then fermented in water to remove the mucilage before being washed clean and dried. This process brings clarity to the cup, allowing the bean’s natural characteristics—shaped by altitude, soil, and varietal—to shine through without interference.


The Colibrí Tarrazú is made up of two cherished varietals: Caturra and Catuai. These small-bean, high-elevation varieties are known for their balance and sweetness. The resulting cup is incredibly refined, with flavour notes of sweet lollipop, peach, marshmallow, and a gentle softness that feels almost like sipping silk. It’s delicate without being weak, smooth without being simple—a coffee that rewards quiet moments and slow sipping.
