Johan Vergara with his father Edilberto, are exploring different fermentation techniques such as oxidation followed by anaerobic fermentation in bags, as a way of creating unique flavour profiles while persisting with the age old natural processing. Chiroso is a relatively new ‘long bean’ variety of coffee discovered growing around the small town of Urrao in Antioquia, Colombia and it has captured everyone’s attention, being celebrated for its complex fruity cup profile. This Las Flores Chiroso is without doubt an exceptional coffee.

It was the matriarch of the Vergara family who in 1990, set about planting 18,000 coffee trees on their 1,730 metre high Hukia property, known as Las Flores. Each year the family continued to plant seedlings until they reached an impressive 90,000 coffee trees. But in 2006, after participating in the Cup of Excellence the family became motivated to focus on specialty and differentiated coffees. They began propagating Pink Bourbons, Tabis, Javas, Maracaturra and other exotic varieties such as Wush Wush and Bourbon Sidra.
This completely new ‘hand picked’ Colombian hybrid Chiroso, from the 1,730 metre high Las Flores, property in the Hukia region, is a remarkable coffee.
Created by Johan Vergara and his family using elaborate fermentation techniques. This is a sweet, sparkling, fruity, tropical coffee, very much like a Champagne. It releases passionfruit, raspberry, almond, and chocolate notes up front and a lingering strawberry, crisp white wine, with an almost effervescent acidity. It is a completely new coffee that is making headlines around the world and it is without doubt one of the most extraordinary coffees we have ever tasted.
