Discover the May Specialty Estate: Colombia Manos Juntas – Castillo Natural
Each month at Yahava, we take you on a journey through flavour—one that spans countries, climates, and coffee-growing cultures. This May, we’re headed to the lush mountains of Cauca, Colombia, where our latest Specialty Estate release is creating serious excitement among the Yahava crew and tasting bench regulars alike.
A Celebration of Natural Sweetness
Introducing the Colombia Manos Juntas – Castillo Natural. Grown at a stunning 1,750 meters above sea level and processed using the natural method, this coffee is a shining example of how altitude, varietal, and processing come together to create something extraordinary.
The beans come from the Castillo varietal, a hybrid developed in Colombia for its disease resistance and natural sweetness. But when paired with careful natural processing, this variety becomes something else entirely. The cherries are dried whole—skin, fruit, and all—on raised beds under the sun, slowly developing layers of flavour over time.
The result is a cup that’s vibrant, fruit-forward, and beautifully sweet, with flavour notes of grape candy, red apple, and cherry, rounded out by a smooth cacao finish. It’s a tropical treat in every sense—bold, balanced, and incredibly moreish.
Why It’s Special
Natural processing requires patience and skill. Without the aid of water to wash away the fruit, the beans must be monitored constantly as they dry. Temperature, airflow, and timing are everything. When done right, it delivers a cup with amplified sweetness, rich body, and deep complexity—and this coffee delivers on all fronts.
Whether you’re a seasoned sipper or a weekend brew explorer, this Specialty Estate is made for discovery. It’s a chance to experience a coffee with character, clarity, and a touch of Colombian sunshine in every brew.
Brew Tips
This coffee shines in filter brews like pour-over, AeroPress, and batch brew, but adventurous espresso drinkers will also love its candy-sweet body and fruit-forward punch. Ask our crew at the Tasting Bench for their favourite way to enjoy it!
