Decaffeinated Mellow Coffee Beans with Wonderful Aromas and Flavours

The challenge was to create a near perfect decaf, entirely chemical-free, but it must also be a great tasting coffee. These three characteristics have not previously produced great bedfellows. The notion was you could shoot for any two but not all. The Mountain Water process seems to have broken through this ancient enigma and created the impossible; a great tasting decaf. There is no substitute for a great coffee so we started with a wicked Mexican; Mountain Water Decaf takes these beans and using glacial melt-water from Mexico’s highest mountain, Pico de Orizaba, begins the decaffeination process. The beans are gently steamed and then immersed in glacial water. Caffeine slowly distillates by osmosis, leaving the bean’s admired characteristics fully intact.

Rainfall isn’t just a great decaf; it’s a delicious-tasting and aromatic coffee.

Mexican coffee beans are blended and washed in a unique water filtration process that removes the caffeine but retains the coffee’s wonderful aromas and flavours.

The ‘Mountain Water’ process removes 99.9% of the caffeine but preserves the Mexican beans with its original fruity sweet flavours. Decaffeination often robs a coffee of more than just caffeine. The flavours, the brightness and even the mouth-feel can suffer in the crusade for a good night’s sleep. Rainfall is a significant step up in our quest to discover the perfect decaf.

The Body & Brightness Profiles:

When you first taste a coffee, you should first assess its body or mouth-feel and also just how acidic or bright it is. You may like a coffee that has a whole lot of body but with low acidity. Or you may like a mellower mouth-feel but a brighter acidity. It really is a personal preference, there is no right or wrong.

The Flavour Profiles:

What sets each individual coffee apart will be the flavours or what we call the “tasting notes”. The tasting notes are many and varied ranging from floral to nutty, spicy to berry, chocolaty to citrusy, just to name a few. These flavours make each coffee very different and so special. Where the coffee is grown, climate, elevation, soil type and harvesting techniques will all impact on the flavour so unique to each coffee.
