Ethiopia Kaffa G2
From the birthplace of Arabica coffee, the Kaffa region has high-altitude forests and biodiverse ecosystems that provide ideal conditions for cultivating coffee. This is the place where heirloom varieties grow wild and flourish under natural shade. 
Smallholder farmers in the region handpick ripe cherries, which are then processed at local washing stations. The washing begins with floating the cherries to identify and remove defective cherries, followed by pulping, all within 12 hours of harvest. The coffee then undergoes underwater fermentation for 48 to 72 hours to enhance the flavours before being thoroughly washed to remove mucilage. The beans are then dried on raised African beds for 8 to 10 days.
 
Tanzania AA South
Coffee was introduced to Tanzania from the French Reunion Island, not as one might have expected, overland from Ethiopia. 
Increasingly over the last decade a widely held belief has grown that Tanzania’s Southern Highlands coffees are the equal of any of Africa’s best. 
The ripest berries are hand picked and then pulped on the same day to prevent deterioration before air drying on African beds. The Southern Highlands are producing a fine bodied, sweet and fruity coffee with a distinct delicious acidity. 
Founder of Communal Shamba Coffee, Keremba Brian Warioba is reported to have said “Watch out Kenya, watch out Ethiopia, the small brother is ready to step up. We are going straight to the top. In the next five to six years, we aim for our coffee’s to be at the top of the production charts.”
This coffee showcases the very best of Africa. An idea we have dreamed about for some time. We have anchored the blend with a good portion of wild Ethiopian Kaffa, then bought a dash of the Tanzanian, Southern Highland fruitiness in over the top. It is a beautifully rounded coffee and the very essence of a distinctly full-strength summer.
